From this fall on the menu there will be a fregola risotto alla pescatora, which we tasted in preview a few days ago. Creamy and tasty, it was served paired with the rosé from Negroamaro Calafuria 2023 grapes by Tormaresca (Salento, Puglia).

The appetizers

Let’s now move on to the menu of Aquamarina Roma. Let’s start with the appetizers, from our point of view the highlight of the whole dinner. On the menu you will find very fresh raw fish, tartare and carpaccio (16€), served with julienne vegetables, aromatic herbs and light emulsions, as well as hot seafood such as fried anchovies wrapped in a crunchy breading. We tasted them paired with a Vermentino 2023 by Tenuta Guado al Tasso (Tuscany).

First courses

Then we move on to the first courses, the classic ones of the maritime tradition, with some small variations on the theme that further enhance the raw material, such as the homemade Tagliolino all’uovo Ajo e Ojo and sea bass (18€). A great classic is the Fettuccelle with Sicilian red prawns (22€).

Second courses

Second courses are offered in different cooking methods, from the oven to the pan or grilled, such as the Calamaretto peas and mint (21€), always respecting the delicacy of the raw material. Don’t miss the choice of whole, tapered and flat fish, according to the availability of the catch of the day (7€ per 100g) and served at the table with the guéridon. A small whim of yesteryear. Finally, an ever-appealing Fritto di paranza (18€) with a light crunchiness is a must.

First of all, the professionalism and kindness of the staff who knows how to be discreet but not detached, you can perceive the passion for the work and the desire not to lose human contact with the customer. We really appreciated the little moments in which the chef approached the tables to describe the dishes in a few words. Emilia Bangrazi, hotel manager, kept us company all evening and made us feel at home (the best feeling).

Aquamarina is located few minutes walk from the Trevi Fountain in via dell’Umiltà 36 inside a luxury hotel. We can define it as a “5-star trattoria” inside an architectural residence designed by Studio CaberlonCaroppi. This is the gastronomic novelty of Shedir Collection, the third restaurant after Adelaide-Vilòn and Don Pasquale-Maalot, the first all-fish. Aquamarina is a convivial and relaxed seafood restaurant, where you feel at ease.

The freshest raw material

Chef Fabrizio Leggiero’s cuisine starts with the choice of excellent raw materials, which are respected to enhance the freshness of the fish. Before Aquamarina, chef Leggiero worked at the historic fish restaurant, Pierluigi, an institution in Rome, at El Toulà, where he stayed for 15 years, or at Crostaceria Ipanema. He has a great passion for the sea and fish cuisine.
